Chef Nora El Sadat
Ingredients:
- 1 bag of okra
- 6 pieces of meat cubes with no fat
- 2-3 Tbs of quinoa
- 4 cups of fresh tomato juice
- 2 minced onions
- 1 tsp minced garlic
- 1 tsp (teaspoon) tomato paste
- 1 chilli pepper
- A Pinch of brown sugar
- 2 Tbs (Tablespoon) canola oil or almond oil
- Fresh coriander
- Salt, pepper, coriander
Okra Tajin Preparation Steps:
- In a hot pan place the almond oil and the minced onions
- Mix the ingredients and then add the garlic, followed by the meat cubes
- Keep stirring until the meat gives you a nice brown colour which will indicate that the meat has been cooked
- Next add the bag of okra to the pan
- Then add the tomato juice and paste followed by the seasonings: salt, pepper, dried coriander and then stir the ingredients together (add the chili pepper if you like spicy dishes)
- Finally add the pinch of brown sugar and the fresh coriander, mix again and leave the okra to boil for around 2-3 minutes
- Then shift your okra into a tajin and place it in the oven for a duration of 30-45 minutes depending on your oven’s heating capacity
Quinoa Preparation Steps:
To prepare the quinoa use twice as much water as quinoa, then cook uncovered until the quinoa has absorbed all the water.
- Rinse the quinoa
- Combine the rinsed quinoa and water in a pan
Bring the mixture to a boil over medium-high heat, then decrease the heat and let the quinoa simmer until it absorbs all the water (10-20 min)
